2 minute drill

I have been trying to research this and haven't found any good explanations on it. Why is it that a team that seems to be barely able to move the ball can come out in the 2 minute drill and at least get in FG range? Is it a change in the way the defense plays?

You would think if it were purely offense, you would run those sorts of plays all the time. I am asking about all levels not just the Griz btw.

Anyone that played football or that just has more knowledge than I have an idea?
 
Defenses change in the last 2 minutes. They just try to avoid the "big play", and will typically give up the stuff underneath to protect against the long run, long pass, etc.
